A Cool Piece of Cake

Abundance of styles makes choosing wedding torta a breeze

By Benedetta Lamanna

A wedding just wouldn't be a wedding without a cake.
Long considered a symbol of fertility, ancient Romans would throw the wedding cake at the bride and even break it over her head. Cakes in Ancient Rome were made of either wheat or barley, making the ritual a rather unpleasant one for the new bride.
Over the years, cakes were gradually made taller, with several cakes stacked on top of each other. The newlyweds were then commanded to kiss each other from across the top of the cake without knocking it over. If the couple could do this successfully, it was considered a sign of good fortune and a promise of a happy marriage.
Today, wedding cakes are still generally considered good luck symbols, as well as a gustatory celebration of the couple's union. While the custom of the wedding cake being a beautiful, enormous delicacy topped with icing remains - a tradition that came about during King Charles II of England's rule - cakes today are anything but boring.
Cake designs can take on many shapes or forms -literally. Personal theme cakes add a very nice touch to a wedding. City-dwellers can celebrate with an ultramodern "skyscraper" cake. Blanketed in rolled chocolate icing, the cake is punctuated by small gold and silver sugar-paste squares that mimic windows. A winter-white cake that is beautifully adorned with iridescent, edible "snowflakes" is ideal for a winter wedding.
Colourful options also abound. A fun fondant-covered creation covered with green, lilac and yellow icing looks lovely when playfully dotted with poppies. A shell pink, three-tiered rolled fondant wedding cake with strawberry cream filling and fun flower appliqués is very picturesque. Another stunning cake design is a lovely genoise creation decorated with clouds of meringue that is topped with exquisite sugar-paste flowers.
For couples who prefer classic white cakes, the right details will make the cake stand out from the crowd. White sugar daisies and bunches of large white sugar bows beautifully accentuate a pale yellow rolled fondant cake. A beautiful three-tiered seashell decorated cake looks magnificent while a fondant cake adorned with sugar lilacs is perfect for a spring wedding.
If the newlyweds to be want to incorporate tradition with a truly special and romantic touch, a grand rolled-fondant cake with parchment-coloured icing is a wonderful backdrop for adding on personal, poetic sentiments with icing. u
